Goodbye April Showers (I hope!)

Inevitably, I love cupcakes and have been riding the bandwagon for years. I am certainly no professional or sugar artist, but I do quite enjoy the process of crafting a delicious little piece of art now and again. At the end of March, I threw a small dinner party for the finale of How I Met Your Mother and was inspired to put together a simple vanilla bean cupcake with a lightly flavored pineapple buttercream frosting, that I then dubbed "The Pineapple Incident". If you are a fan of the show, you know what I'm talking about. Also, where did it come from????? 

We invited the month of April in with a simple yellow gum paste umbrella decoration atop. I thought it might be nice to bid adieu with a little shout out to the delightful treat. 

You can make this with a simple box vanilla/vanilla bean cake mix and this recipe for the frosting:

Pineapple Buttercream Frosting

1 stick of butter, softened
1 16 oz. bag of powdered sugar (you may want more or less for taste & consistency)
1/4 tsp. salt
1 short can of crushed pineapple in juice (separate - you will use some of both)

1. Beat softened butter and salt in bowl or stand mixer until creamy. 
2. Gradually add powdered sugar, keeping a close eye on the consistency. 
3. Add all crushed pineapple chunks.
4. You may choose to add some of the pineapple juice and/or more powdered sugar depending upon the desired consistency. 

Recipe variation for summer:  Pina Colada Cupcake - sub vanilla cake for coconut cake or add coconut extract to vanilla cake mix (~1tsp). Add shredded coconut to the frosting or decorate with toasted coconut on top.
